Upgrade Byte Buddy along with Mockito 5

Upgrade Byte Buddy to 1.17.x where Mockito 5.18.0 or a later 5.x, which depends on Byte Buddy 1.17, gets an older Byte Buddy transitively, such as one whose version a BOM like that of Spring Boot 2 manages. Such a Mockito fails to load its mock maker, for example with a ClassNotFoundException for net.bytebuddy.utility.GraalImageCode.
