Upgrade the JUnit a Spring Boot 3 parent manages for Cucumber-JVM 8

A Spring Boot 3 parent manages JUnit 5.x through its junit-jupiter.version property, which wins over a junit-bom imported by the project itself. Set that property to the JUnit 6.1.3 that the Cucumber-JVM 8 cucumber-junit-platform-engine is built against, unless the project already sets it.
