Migrate broker and client configuration removed in Kafka 4.0

Renames the configuration Kafka 4.0 removed in favor of a replacement, and deletes what it removed without one. log.message.timestamp.difference.max.ms is commented out, as it maps to two settings (log.message.timestamp.before.max.ms and log.message.timestamp.after.max.ms), and so is auto.include.jmx.reporter, as deleting an explicit false would turn JMX metrics back on.
