Migrate ConsumerRecord constructors removed in Kafka 4.0

Kafka 4.0 removed the ConsumerRecord constructors that take a checksum, which Kafka had ignored since 3.0. Drop the checksum and call the constructor that takes Headers and a leader epoch, passing the empty RecordHeaders and Optional that the removed constructors defaulted to.
