Create MCP resources and tool results with their builders

The MCP Java SDK 2.0 that Spring AI 2.0 uses removed the shorter constructors of McpSchema.Resource and McpSchema.CallToolResult. This replaces them with McpSchema.Resource.builder() and McpSchema.CallToolResult.builder(), leaving out the arguments that were null.
