Pass a ChatOptions.Builder to ChatClient

In Spring AI 2.0, ChatClient's options(..) and defaultOptions(..) take a ChatOptions.Builder, which ChatClient merges with the model's default options, instead of built ChatOptions. This drops the build() from an options builder passed in place, and passes options.mutate() for any other ChatOptions.
